Last night, Stephen Casscles shared with me a bottle of Left Bank Ciders Co-ferment Cider from Left Bank Cider called "Pick'Em". Left Bank is a small-batch cidery, located in Catskill, NY, It is owned by Tim Graham, Anna Rosencranz, and Dave Snyder. Left Bank is one of the best small-production, artisanal cideries in New York State.

This co-ferment is made from the English cider apple variety Porter's Perfection, blended with Heritage grape variety skins of Pallmer, Annie Noir, Bacchus, & Burdin 6055 grown at the Casscles vineyard in Athens.
The resulting artisanal rose' cider co-ferment is a dry, bubbly, with smells of cooked apples, cinnamon, cloves, that had elements of a "sour" beer. Drank cold, it's incredibly rustic and refreshing, perfect companion for a cheese plate, or roast chicken.
