Stark Bourbon - An Impressive Mash Made in New Hampshire

Stark Brewing is an active brewpub and brewery in the historic mill district of Manchester, New Hampshire since 1994. Stark Bourbon is produced as part of their in-house spirits line (which also includes rum, vodka, and coconut rum). Stark Brewing Company in Manchester, New Hampshire, started its on-site distilling operations around November 2016, following a major renovation and grand reopening of the historic brewpub (formerly known as Milly's Tavern / Stark Mill Brewery). Their in-house micro-distillery (noted as the first legal distillery in Manchester in over 150 years) to produce spirits including their signature Stark Bourbon.

Stark Handcrafted Bourbon Whiskey is made from a mash of  55% corn, 20% barley, and 25% rye. There is no age statement, but straight bourbon requires a minimum of two years in new American charred barrels. This has the flavor of something slightly older. I love the mashbill, because that much barley really gives off a malty flavor versus the cereal of the corn. And there's just enough rye to add the spices and complexity to make it a more interesting bourbon than just another corn loaded vanilla bomb or a high rye bourbon so spicy, you forgot it was bourbon. 

Stark Hand Crafted Bourbon Whiskey starts off with notes of fresh cut apple, traditional caramel, oatmeal, toasted bread, vanilla, and shortbread, with hints of brown sugar and honey. On the palate much of that comes through as well as notes of mocha, roasted nuts, and something more savory. There's a nice, light note of Christmas spice, and white pepper at the end, complimented by soft, approachable oak characteristics.

This is a lovely, straight forward whiskey. Well made. Old enough and well crafted enough to represent complexity and balance, while at the same time to have it's youth shine. A unique bourbon, made in the mountains of New Hampshire. A whiskey worthy of the Granite State.
