Neverstill is still relatively new on the scene.in New York. It features wines made from Finger Lakes grapes, and achieved a quick and well earned following. Owned by Christy Counts, the list has been well made, well received, and has been helmed by winemakers like Craig Hosbach and Nova Cadamatre.
I tried the most recent version of their Nverstill Cabernet Franc at the Cab Franc Forward 2026 in New York City in early February. This Neverstill Cabernet Franc 2023 "is a blend of two different clones from our Hidden View vineyard on Seneca Lake. Harvested at the start of October, the grapes were destemmed and gently crushed at the winery, followed by an extended cold soak to enhance the color and tannin structure of the resulting wine. After fermenting to dryness, the wine was pressed off the skins and settled in tank prior to being racked to French oak barrels, a third which were new, for malolactic fermentation. The wine was aged for 16 months in barrel prior to bottling in March 2025." The wine starts off with lovely notes of bright red raspberry, red currants, and bright cherry, with a touch of light plum. It's aromatics are floral with a wisp of spice and white pepper. It drinks beautifully, and is easily approachable. A lovely, lovely wine, that finishes long on cherry and pepper. Truly a very pretty, pretty wine. One that should be on your table.
