"This year’s batch is brewed with a simple grist of our own floor-malted pilsner style malt and fermented with the juice and skins from heritage Hudson Valley grape varieties grown by Quimby Farm in Marlboro, NY. "In past years we sourced 10+ heritage grape varieties grown just a few miles from the brewery by J. Stephen Casscles where he keeps over 100 of these rare varieties alive! But 2024 was a tough year for Steve’s grapes, and faced with the prospect of not having enough, with Steve’s help, we turned to a commercial grower also cultivating some of the same varieties. Quimby Farm in Marlboro, NY is run by 5th generation farmers who are happy to keep the tradition of growing heritage grape varieties alive.
