
Waiting for their vines to mature and to produce their first wine, the folks at Catoctin Breeze Vineyards ventured to make the sweet and refreshing drink – honey wine. Honey wine, or mead, is a honey based alcohol that is fermented with an added zest of natural spices and berries. In their mead, they use 100% American honey, organic spices, and fresh berries. The mead is then aged for at least a year in American Oak barrels before bottling.
This honey wine is made with raspberries, blueberries, and marionberries. It has a nice ruby color. It was sweet and tangy with enough berry flavor to give this wine a nice berry flavor and a nice amount acidity to balance it all out.
